Confessions of a Fat Girl 107: Accountability and Responsibility

90.6kg. Not too shabby, Ihunna! Not too shabby! I was actually thinking I would have lost more, what with all the emotional and physical exercise, but I’ll accept a loss of 1.5kg!

Standing in front of my bathroom mirror, I remembered something I read a while back, which has become something of a mantra for me, especially when I stare too long at my stretch marks, and become annoyed by my flappy bingo arms. My body has been through too much to ever be magazine cover perfect, but it’s my body and it’s getting stronger and healthier every day. It carries me to the gym, around the neighborhood on a sunny day, and about my chaotic life in general! It also allows me to hold my husband, kids, and loved ones! So it may not ever be “perfect”, but it is beautiful.

With that thought, I went to my kitchen to try to whip up something healthy. With Chidera already out to work, JJ out of the house, the kids at school, and Akwaugo still in bed, I had more than enough time to pitter patter around.

As I ransacked my kitchen, I had the TV on, and a story on CNN caught my attention. There was an update on story from last year, about an office in California, where an office had to be evacuated, and seven people were sent to the hospital because of a filthy fridge. I was completely disgusted by it. How did a group of seemingly intelligent people allow this to happen? No other reason than not taking responsibility for a shared space in an office. Can you imagine letting your own fridge get so dirty, that you had to call emergency services to deal with it? It’s a case of people having zero regard for what’s not theirs.

What is it about our society that makes it acceptable to not take responsibility for one’s own actions? I know there is no singular answer, and I will likely make myself crazy by dwelling on it too long, but it is something that each of us needs to look at, if we’re going to make something wonderful of our lives. And it got me thinking about accountability.

For a long time, I didn’t want to be accountable for my health, or be responsible for my fitness. I wish I knew why, but I’m sure my upbring had something to do with it, though in the end, it falls to me. I started to realize that I had an obligation to my body, to my life, to the vows I made my husband. I didn’t want “in sickness and in health” to be “in sickness” because of something that I could have prevented.

For me, being accountable means that I am the one in charge of my health and well-being. That I can most likely prevent a future full of depression and disease, by taking care of myself now. That I can most likely avoid trips to the doctor or hospital, by treating my body with respect and love, and nourishing it with healthy things, plenty of water, and giving it lots of rest. My body is a gift that I was entrusted with. I’m not going to treat it like some filthy fridge in California.

We’re only given one body, one set of organs, one chance to make this life as happy and healthy as possible. We don’t get a second chance if we let it slip away by avoiding responsibility.

But back to food!

Korean-Steak-and-Noodle-Lettuce-Cups-2

I found some beef in the freezer, and decided to make something of a broil, marinating in ginger, garlic, tamari and apple cider vinegar. My intention is to grill the beef, and slice it very thinly against the grain, saute some peppers, bell peppers, onions and fresh ginger, then toss in the beef and add some reserved marinade, and a bit of cornstarch to get it all saucy and coated. Instead of rice or noodles, the beef and veggies will be served in lettuce cups. I’m salivating just thinking of it. I know better than to make only one serving, because I’m sure JJ, the kids, Akwaugo, and even Chidera will be very interested.

For dinner, I found a recipe online for a Chicken Salad with Potatoes and spinach recipe, using potatoes, olive oil, vinegar, mustard, peppers, and parmesan. Can’t wait for that either.

To be honest, I hope that the healthy food can help put a smile on Chidera’s face. We still haven’t had a chance to talk about what’s going on with her…and my heart breaks thinking about what lies ahead for her.

It’s all in God’s hands!
