Confessions of a Fat Girl 61: Sweet Potato & Chicken Salad

I walked into the gym with trepidation, not quite knowing what to expect. I tried to avoid eye contact with anyone, and instead made my way to the treadmill I favoured. Best to just get it over and done with.

“Mrs J!” came my Trainer’s voice. “I’m so glad you finally made it.”

His genuinely happy smile disarmed me, and I let down my guard.

“Yes oh! I’m back! I hope you can help me get back to the December me!” I joked.

“We’ll even do better than that,” he winked.

We both decided not to push things too much on the first day, so after some light aerobics, I spent the rest of the hour on the treadmill. Though not high intensity, I was filled with tremendous satisfaction as I left the gym.

As my sister-in-law, Ezioma, was on her way to me, with the Valentine’s Day hampers, I decided to quickly have a shower. I hadn’t had time to make a breakfast smoothie, so instead rushed a few apples and a cup of green tea. She had decided that it was easier for her to come to meet me in Lekki, than for me to head to her at Agbara Estate…which is true, I won’t lie!

My mouth hit the floor when I saw her, as she walked into the house. The tables had literally turned 180 degrees! Just a couple of months ago, she had been the fat one, and I had been the newly slim(ish) one. Now, I was the orobo, and she was the sexy thang!

“22kg!” she announced the number of kilos she has lost, proudly! “Say hello to Miss Size 16!”

“I am speechless! Ezi, you have shamed me!” I whistled. “How did you do it?”

“I just followed your plan. Everything you told me to do, I did!” she answered. “I can’t thank you enough! You have been a blessing to me!” then laughing, added “Of course, walking around in London, buying items for the hampers, also helped me burn an additional kilo or two!”

I smiled, but my heart broke over the realization that, if I hadn’t derailed from my plan, I might have hit my goal weight of 65kg by now. I have lost almost 3 months to reckless eating, and in addition to not losing weight, I have gone on to even add more weight…enough to bring me almost to where I had even started from!

But this was no time to sulk, and cry over spilled milk. It just made me all the more determined to attain my goal.

Ezioma and I spent the rest of the morning, and early afternoon, sorting through the hampers. It was obvious that I couldn’t have chosen a better partner. Everything she bought were items that I also would have chosen, and I was more than pleased with the final products. She had gone all out to source the best items, at the most rock bottom prices, such that, even with our healthy mark-up, the hampers were still very attractive, price-wise.

Tomorrow, we will be heading out to market the items that haven’t already been booked. As we brainstormed which places to go, I found myself getting excited at the prospect. Finally, I have found a business to be excited about!

Later in the day, I found myself sifting through my healthy food folder, in my Inbox, desperate to find something I could cook real quick, before I got too hungry and opted for an unhealthy option for lunch. One of the cardinal rules of dieting is that when you fail to plan, you plan to fail! Because I haven’t had time to stock the house with the items I need, I run the risk of putting myself in a very precarious position.

Luckily, I found a recipe that caught my eye. It was one of those Ogonna sent me last year, which I never got round to trying. A sweet potato and chicken salad! Perfect! And I had all the ingredients, so I was very ready to go!

I pre-boiled the sweet potatoes, drained them, and mixed them in a small sauce pan with chopped skinless chicken breast, and finely chopped red bell peppers and onions. I drizzled a bit of vinegar, fresh lemon juice, fresh tarragon, salt, pepper, and minced garlic…and voila! Perfection!

Eating that meal gave me so much satisfaction…and not just physical satisfaction. I was happy that, for the first time in weeks, I was eating a healthy meal, that I had prepared, and it felt good to know that I am finally back on track!

The icing on the cake was when my younger son insisted on having a taste, and actually begged for more. Considering it was a very basic salad, I was quite surprised that he was interested…but he was. And it made me happy.
