90.4kg!
Well…at least, I didn’t add! Considering I didn’t do any exercise at all last week, I will take a loss of 0.2kg, thank you very much!
This weekend, I stumbled on something about I’ve been reading a bit about the fat acceptance movement, and I am having mixed feelings about it. It’s a very loaded issue, to say the least. Discrimination of any kind is an ugly part of society, and having spent the majority of my life fat, I know exactly what it’s like to be on the receiving end of such treatment.
Despite the debates and arguments, I feel that obesity is a disease and that too much fat is unhealthy. If it causes you to get winded going up a flight of stairs, how can that be considered healthy? I’m not a doctor or a scientist, but seen the effects that obesity has on the body. I’ve also spent time in a hospital bed due to obesity related health problems. 2007 was not a good year for me. Apparently it’s wrong to say that fat is unhealthy, and that it is judgmental to think so. My personal experience tells me otherwise.
Diets also don’t work, that is one point that I truly believe, but I also believe that obesity, the kind of fat that leads to metabolic syndrome, immobility, heart disease, is a curable disease. Of course, it’s not easily cured. The approach has to be kind, nurturing and has to be sought out at the roots. It’s not a one-size-fits-all cure either. But the cure is inside each of us. Our bodies have amazing healing powers that can be released if we choose to embrace good health.
Even though we shouldn’t let anyone tell us that we are any less of a person because we don’t fit some media-generated ideal, we also shouldn’t let unhealthy fat get in the way of living the happiest, most vibrant life possible.
In other news, it was so good to have Chidera back to her usual bubbly self. JJ and I have agreed that we’re not letting her move anywhere, especially now that she’s carrying a baby. She’s going to stay here wit her kids, for the entire duration of her pregnancy, and for quite a while afterwards. Considering we’re expecting Legachi by the weekend, and Marizu by the end of the month, it might be a real squeeze…but we’ll find a way to make it work.
So, this yesterday, after Church, Chidera and I decided to make some magic in the kitchen…some healthy magic! Sunday company was coming so I wanted a really nice meal. We found a recipe for Roast Steak with Sweet Chutney online, so we decided to go for it. It was so easy…and so wonderful. The steak was tender and juicy with a sweet, glazed crackled edge that was yummy. The Chutney was store bought, but the end result was fantastic! We also made a great side dish from a broccoli salad recipe we found, which involved whisking together crushed garlic, mayonnaise, natural yogurt, vinegar, honey and black pepper until smooth and well combined. And then, in a large salad bowl, adding broccoli, red onion, bacon, and cashews, and tossing with the dressing. It was a huge hit, and we’re definitely making it again.
And as no Sunday lunch is complete without desserts (wink, wink!), we made a light version of a traditional fruit crumble. My new-found love of fruit has me looking for excuses to make this particular recipe. For the fruit, we measured about two pounds of frozen(but thawed) peaches and strawberries, and fresh apples (it could be any fruits of our choice), coarsely chopped, and combined with about a quarter cup of light brown sugar, and 3 tablespoons of brown rice flour. After mixing everything, we turned into a deep pie dish.
For the crumble, we used 1/2 cup of rolled oats, 1/3 cup of brown rice flour, 1/4 cup of light brown sugar, 2/3 cup of chopped pecans, 1 teaspoon of cinnamon, 4 tablespoons of cold butter, all cut in small pieces. We mixed the first five ingredients in a bowl, then added the butter. We rubbed butter into mixture with our fingers until small crumbles formed. We could have used a pastry blender, but I like to play with my food…lol!
We then topped the fruit with crumble, and baked for about 25 to 30 minutes, until fruit was bubbly and the topping is GBD (golden brown delicious)!
It was a delicious way to end the weekend, and start a pumped week ahead!
But it’s back to the grind this week! Target loss is 3kg! Nothing less than that!
